Healthy Honey Carrot Cake at Hinze Dam

Wow, H is not a really easy letter to work with in our geographic location! We could not think of many places starting with H. Then we had a great idea and we chose a destination behind the Gold Coast for our H Cake. “The green behind the gold’ as it is often described as and it refers to the beautiful green hills behind the beaches of the Gold Coast.

So we set off to the green hills, only a short 30 minute drive from home. Our chosen place was the Hinze Dam set in the hills behind Nerang and it is the water supply for the Gold Coast but also a destination to walk, kayak, paddle, bike ride and picnic. A place for some relaxation and fun.

We arrived early on a Sunday and started with a coffee at the cafe located overlooking the dam. It was a great location to sit and chill out over a nice soy cappuccino.

We took a lovely walk across the dam wall bridge. Even early in the day there were a quite a few people walking or cycling here.

Next, we set off to find a picnic table and get started on our healthy honey and carrot cake, lovingly made at home ready for the big day out. We prepared some cashew cream to ‘ice’ the cake. Our cake was adapted from Healthy Carrot Cake by the Healthy Chef

When we visited Brisbane recently we found a little shop selling boutique roof top honey. It made a perfect contribution to our cake! Tastes pretty good on sourdough bread as well.
