One of the lovely thing about living in Queensland is the new season mangoes. The colour, the smell and the juicy taste gets us every time. To celebrate the forthcoming season we purchased this little baby – looking great.
We decided to try our hand as making some of our very own mango/mint/almond/coconut ice-cream.
It was beyond our expectations …
The next day we went out walking in the sunshine and worked up an appetite for our mango, coconut ice-cream.
Ours is a simple recipe:
Top layer: 1/2 cup almond milk, 1/2 cup coconut milk, some vanilla paste, agave syrup (1-2 teaspoon) – mix well.
Bottom layer: blend the flesh from one medium ripe mango with two tablespoon of mint leaves – mix well.
Pour the mango puree into the bottom of the container and then add the almond/coconut mixture, freeze overnight.
Get out of freezer, and allow to soften slightly before ready to serve.
Note: if you like your ice-cream sweeter, please add more syrup.
